Every summer when grocery stores put peaches on sale, Mom pulls out a faded yellowing index card with Grandma’s tidy script scrawled across its surface. As one of the rare times she bakes from scratch, Mom also reaches for her set of mostly unused metal mixing bowls and measuring cups.
If it coincides with one of my visits, I always offer to help. We divvy up the tasks: preheating the oven; peeling the fuzzy skin away from the juicy fruit flesh inside; measuring flour, sugar, and ample amounts of butter (it is Grandma’s recipe, after all—not mine!); gently pressing the shortbread crust into the glass pie plate; spooning in the spiced peach slices, although not quite all of their juices; and generously scattering buttery crumbs across the top.
When the timer buzzes and we pull open the oven door, I always insist on letting the dessert cool to room temperature so the peach juices thicken and set… Yet I’m overruled. Grandma’s infamous peach pie is just that good—my parents want a big slice, topped with vanilla ice cream, as soon as it finishes baking!
Within 24 hours, the empty pie plate sits in the kitchen sink, full of water and a few soapy bubbles, waiting to be washed. With my family reaching for second helpings after lunch and dinner, and sometimes a sliver for breakfast, it often disappears even faster than that!
In case peaches don’t go on sale in time for Memorial Day this year and they cost a small fortune, I decided to come up with another sweet treat that only required a small amount, rather than six or seven big juicy peaches… This Peach Pie Protein Dip with bite-sized Healthy Sugar Cookie Dippers! It has those same irresistible flavors as Grandma’s peach pie, but it’s much healthier with no butter, refined flour or sugar. And it’s perfect for making ahead of time, too!
Even better? My family already asked when I planned on making this again! They loved it just as much as Grandma’s pie!
Let’s start with the star of the {summer dessert} show… The dip! You just need a few key ingredients and less than 10 minutes to make it. Finely diced peaches, Greek yogurt, and stevia. That’s it!
It’s important to dice the peaches to be very small, about the size of mini chocolate chips, so that every bite of the dip contains some fruit. How disappointing would it be to scoop up some of this gorgeous dip with your sugar cookie… Only to find it has no peaches?? Trust me—it’s worth the few extra minutes of chopping!
If you’ve been around my blog for a while, you know how much I love stevia! It’s a plant-based, no-calorie sweetener that’s clean eating friendly (aka nothing artificial or processed or overly refined about it!). It’s also highly concentrated, so you need less of it than you would regular sugar! This is the kind I use because of its warm vanilla flavor and virtually no detectable aftertaste. You can find it at many health-oriented grocery stores, but I always buy mine online here because that’s the cheapest price I’ve found. (And you’ll use it in all of these recipes of mine too—plus the sugar cookie dippers!)
So let’s talk about those sweet sugar cookie dippers! They contain no butter, refined flour or sugar. I suppose it’s slightly ironic that I call them sugar cookies if they lack traditional granulated sugar! ?
Instead, you’ll use the aforementioned stevia to sweeten them, along with some honey. And rather than refined flour, you’ll use white whole wheat flour! White whole wheat flour is made by finely grinding a special type of soft white wheat (hence the name!), whereas regular whole wheat flour comes from a heartier variety of red wheat. They both have the same health benefits (like extra fiber!), but white whole wheat flour has a lighter taste and texture, which makes it perfect for these sugar cookies.
After chilling, you’ll use my special trick to rolling out sugar cookie dough… You’ll roll it out between two large pieces of plastic wrap! No extra flour required for your rolling pin or work surface… Making it so much easier to clean up! Then transfer that to a silicone baking mat, slice it into small squares with a pizza cutter, and pop those cute little sugar cookies in the oven.
How yummy and easy is that?? ?? And when you make your own, remember to snap a picture and share it on Instagram using #amyshealthybaking and tagging @amyshealthybaking IN the photo itself! (That guarantees I’ll see your picture! ?) I’d love to see your dip and sugar cookie dippers and feature them in my Sunday Spotlight series!
Peach Pie Protein Dip + Healthy Sugar Cookie Dippers | Print |
- 1 ½ cups (360g) plain nonfat Greek yogurt
- 1 ¼ tsp vanilla crème stevia, or adjusted to taste
- 2 ¾ tsp powdered stevia, or adjusted to taste
- ¼ tsp ground cinnamon
- 6 tbsp (75g) finely diced peaches
- 1 batch sugar cookie dippers (recipe here!)
- Stir together the Greek yogurt, vanilla crème stevia, powdered stevia, cinnamon, and peaches in a small bowl. Cover and refrigerate for at least 30 minutes, or until ready to serve.
I highly recommend using both stevia products! They’re some of my favorite sweeteners, and you’ll use them in all of these recipes of mine, too. The vanilla crème stevia + powdered stevia is the equivalent of 10-12 tablespoons of granulated sugar. If you prefer to use another sweetener, you’ll need to use your sweetener’s equivalent of granulated sugar.
For a quick shortcut, substitute vanilla Greek yogurt for the plain nonfat Greek yogurt, vanilla crème stevia, and powdered stevia.
