During the second half of my undergraduate degree, I worked in an organic chemistry research lab on campus. I typically put in 10-15 hours during the week to run experiments and analyze the results, and I increased my time to 40-50 hours during the summers when I didn’t have any classes or homework to worry about.
I enjoyed those OChem days surrounded by the graduate students, constantly learning and trying to make advances in modern medicine. Therefore, it seemed natural to continue on that same path, so I applied for and started graduate school myself.
Yet after the first few months of grad school, I occasionally thought about my other dream of baking as a full-time job. I began wrestling with it a lot, knowing that my past and present chemistry studies were propelling me towards a very successful career… But wondering if chemistry was what my heart really wanted from my future.
Four years ago, I found the courage to hand in paperwork and walk away from graduate school. Since then, I’ve never—not even for a split second—regretted that decision to pursue Amy’s Healthy Baking as my full-time job.
I absolutely love creating recipes to share with you, and I love it even more when you try them, leave me sweet comments about how much you enjoyed the treats, and share pictures with me of how they turned out. My heart melts every time you do that!
So to say thank you, I’m putting the spotlight back on you today! Here are some of the recipes that you’ve tried and pictures that you’ve shared on Instagram. I truly appreciate each and every time you do that; it really means the world to me! ♡
